Jr. League of Lake Charles' summertime drinks

Cajun Juice

Serves 30

2 cups water

6 regular tea bags

1 cup sugar

1 (6-ounce) can frozen limeade concentrate

1 (6-ounce) can frozen pink lemonade concentrate

Mint leaves for garnish

Bring the water to a boil in a saucepan.  Remove from the heat and add the tea bags.  Let steep, covered, for 10 to 15 minutes.  Remove the tea bags and add the sugar.  Stir until the sugar is dissolved.  Pour into a 4-quart pitcher.  Add the limeade and lemonade concentrates and stir until melted.  Add enough cold water to make 2 quarts.  Add ice to fill the pitcher.  Serve garnished with mint leaves.

Tip on Page 33 of Marshes to Mansions:

Faced with the coming heat, what goes down easier than cool, icy water?  Water flavored with the irresistible tang of blackberries.  We found out that you can turn blackberries into luscious ice cubes that will flavor a glass of water as they thaw.  Try it to create a refreshing drink that looks – and tastes – like the essence of summer.

Lynchburg Lemonade

Serves 7

1 cup Jack Daniel's® Tennessee Whiskey

1 cup Triple Sec

1 cup liquid sweet and sour mix

4 cups lemon-lime soda

Lemon slices (optional)

Combine the whiskey, Triple Sec, sweet and sour mix, soda and lemon slices in a pitcher and stir well.  Serve over ice.

You may combine all ingredients except the soda in a pitcher ahead of time and keep chilled.  Add the soda just before serving.  This recipe can easily be doubled or tripled.

The above recipes are from the Junior League of Lake Charles' cookbook, "Marshes to Mansions," available at the League office or at www.jllc.net.  It can be purchased at many fine local retailers including Nichols Dry Goods Store, located in Dequincy, LA on East Fourth Street.
