LUBBOCK, TX (KCBD) - We have a full list of top performers this week. Our first stop is Bigham's Smokehouse. They're famous for an old-style mesquite pit which they're keeping busy in preparation for Saturday's big game.

Bigham's Smokehouse at 4302 19th St. owner Joe Keller says, "Starting tomorrow, we'll start cooking for Saturday so we'll be cooking all night to get prepared, hopefully for us to go out and get a victory."

Brisket, ribs, ham, chicken, they've got it all. And according to health inspectors, it all passes the test.

"This is the way they used to do it years ago, so we still do it the same way we've been doing it for 33 years now" Keller says about the pit.

Bigham's goes through around 3,000 pounds of brisket a week, so the pit is cleaned about every 7 days.

"We train all our people to handle the meat with a knife and fork so they're not handling it with hands," Keller says as he slices brisket. "It's kind of old fashioned - there's nothing fancy about it. Just ice keeps it cold and hot water keeps it hot," Keller says about the cold veggies and the steaming meats.

They're prepping their van for the tailgate Saturday and, for the first time ever, fans can get Bigham's smokehouse right inside the stadium. "Go Raiders!" Keller says with his guns up.

There are four other top performers on our list this week. Church's Fried Chicken at 4401 34th fried up zero critical violations. Pizza Hut on 3311 82nd and the Pizza Hut on 4401 82nd both delivered perfect scores. Finally Sazon at 1205 University gives you a little taste of Mexico along with a perfect score.
