Apple-Pecan Dressing

Apple-Pecan Dressing

3 Tbl. Unsalted butter
1 Tbl. Olive oil
1 Yellow onion (small dice)
2 ribs Celery (small dice)
1/2 bunch            Green Onion (sliced thin)
1/2 bunch Parsley (minced)
4 c. Cubed bread (toasted lightly)
1 Rome apple (peeled and small dice)
1/2 c. Pecans (toasted and crumbled)
1 Tbl. Dry rubbed sage
1 c. Chicken stock
1 tsp. Kosher salt
to taste Ground black pepper

  • In a large saute pan melt the butter & olive oil over medium high heat. Saute the onion until almost tender. Add the celery and green onion and saute a couple minutes more. Combine all ingredients in a large bowl and mix well. You may need to add a bit more chicken stock if the dressing seems to be dry. Pour dressing into a baking dish and bake at 350 degrees for 25-30 minutes (until hot all the way through.)
