1 pound extra sharp cheddar cheese (room temperature)
1 stick butter (softened)
2 cups flour
big dash of cayenne pepper
water
Cream butter and cheese together. Add flour and cayenne pepper and blend. Mixture will be a bit crumbly. Add water gradually, one teaspoon at a time, until the dough begins to hold together. The dough will be like a thick biscuit dough. Knead with your hands until the douhg is totally blended and somewhat soft.
Place in a cookie press using the star design. Grease a cookie sheet and salt the cookie sheet lightly. This makes several dozen cheese straws. If you don't have a cookie press, you can roll out and cut into strips like French fries. Bake at 350 degrees for 10 - 15 minutes or until they are lightly browned on the bottom. After they are completely cooled, store in an airtight container. Can be made ahead and stored for a party.
