Green Chili Corn Casserole
In Saucepan:
Melt:
3 T. butter
8 oz. creme cheese
Add:
1/4 C. milk,
cayene pepper (or red pepper),
1/4 tsp garlic salt,
1/4 tsp salt 1 can chopped green chilis,
2 large cans whole kernel corn (drained)
Bake 350 degrees for 20 mins.
Chicken Enchiladas
Mixture:
3 tsp margarine
2 cups sliced mushrooms (optional)
1 bell pepper diced
1/2 cup chopped onion
4 chicken breasts chopped or shredded
1 can cream chicken soup
1 cup sour cream
1 sm. can chopped green chilis
1 1/2- 2 tsp chili powder
12 tortillas (corn or flour)
1/2 to 1 cup grated cheese (monterey jack or mexican)
Saute onion and mushrooms in butter. Remove. Add all other ingredients.
Spoon mixture into center of tortillas. Roll up. Put in buttered 9 X12 dish. Scatter cheese on top. Bake 400 degrees uncovered for 20 mins. (if you have any left over filling... spoon on top of the rolled/filled tortillas)
Spice Tea
1 cup Tang
1 cup sugar
2/3 cup instant tea
1 pkg lemonade koolaid ( 2/3 cup)
1/4 tsp allspice
1/4 tsp cloves
1/4 tsp cinammon
Combine all. Store in air tight or covered glass jar.
Add 3 tsps to 1 cup boiling water. (add more depending on taste preference)
Egg Casserole
1 lb. sausage
2 cups bread cubes (I use croutons w/herbs)
2 1/2 cups milk
5 eggs
1 cup grated cheddar cheese
1 can cream of mushroom soup or 1/3 cup half and half
2-3 Tbs. sour cream
Cook sausage. Drain well. Cover 9x13 casserole dish with bread cubes. Mix remaining ingredients and pour over sausage. Cover and refrigerate overnight.
Bake 325 for 1 hour and 15 mins.
