Hummingbird Cake with Cream Cheese Icing

  • 2 cups Sugar
  • 1 tsp. Baking Soda
  • 1 1/4 cup Vegetable Oil
  • 1 cup Crushed Pineapples
  • 1/2 cup Black Walnuts
  • 1/2 cup Pecans
  • 3 1/2 cups Flour
  • 2 tsp. Cinnamon
  • 4 eggs
  • 2 cups Chopped Bananas
  • 1/2 cup Walnuts

Mix sugar, flour baking soda and cinnamon with a spoon. Add oil, eggs, and pineapples and mix together well. Stir in bananas and nuts.

Bake in three (3) 9 inch round cake pans for 45 minutes at 350 degrees.

Cream Cheese Icing

  • 1/2 cup Margarine
  • 2 pounds Powdered Sugar
  • 2 tsp. Vanilla Flavor
  • 8 oz. Cream Cheese
  • 1/4 cup Milk

Mix ingredients in a mixer.
