Lubbock health inspectors checked out the cleanliness of dozens of restaurants this week, and they found a buffet of violations. But, it's not only bad news in this week's Food for Thought.

Hong Kong at 4845 50th had 13 critical violations.

  • Raw eggs were above the safe cold temperature of 41 degrees; they were thrown out. 
  • Chicken wings and fried chicken were not at least 135 degrees. 
  • Logs were not kept for hibachi and sushi items.
  • Raw chicken and raw beef were stored over raw shrimp. Pans of cooked pork were stacked on top of each other without a lid or cover. 
  • An employee did not use hot water when washing their hands after eating. 
  • There was no hot water at a hand sink outside the employee restroom. 
  • Spray chemicals were stored at the drink station.
  • Fly strips were hung in the kitchen and the dry storage area. These can only be used when the facility is closed and there is no food prep going on.
  • An employee was eating while washing dishes.
  • Five-gallon buckets of sauces and raw chicken were on the floor of the walk-in cooler.
  • Storage racks in the walk-in cooler and the dry storage area were dirty.
  • Walls in the kitchen were dirty, and ceiling tiles were missing.

The inspector notes, due to the number and the nature of the violations management did not show food safety knowledge. The report shows most of the violations were corrected at the time of the inspection.
