Food for Thought: 9/22

A Lubbock restaurant has reopened after the health department forced it to close while they cleaned-up; they were cited with 19 violations. But, there's good news in the Food for Thought report as well.

Cancun Mexican Restaurant at 7905 University had 19 critical violations.

  • Barbacoa and cooked beans were not cooling properly. This can cause bacteria growth.
  • Multiple food items were not below the safe cold temperature.
  • The ambient temperature of the walk-in cooler was 56 degrees. It must be cold enough to keep foods at 41 degrees or below. A reach-in cooler was also not working properly.
  • There was no thermometer in a reach-in cooler.
  • Raw chicken and raw chorizo were stored over seafood.
  • Employees did not properly wash their hands before putting on gloves.
  • Access to the hand sink was blocked.
  • Hydrogen peroxide was stored above fruit.
  • Ready-to-eat foods did not have a date mark.
  • Other foods were not labeled.
  • A dirty cloth was on the prep table.
  • Multiple kitchen utensils were dirty or broken.
  • Food was stored on the floor of the walk-in cooler and in the walk-in freezer. Black tubs were stored on the kitchen floor.
  • Surfaces in the freezer were rusted. Cabinets and drawers were dirty.
  • A light in the freezer did not have a cover.
  • Floors and walls were dirty.
  • There were no hand washing signs in men's restroom.
  • The inspectors notes, due to the number and the nature of violations management did not show proper food safety knowledge.
  • There were no food handler cards available for those who handle food.

According to their re-inspection everything has been corrected.
