Food for Thought: 3/8

LUBBOCK, TX (KCBD) -

A Lubbock Mexican food restaurant is open again after health inspectors forced them to temporarily close - and clean up their kitchen - after its latest health inspection.

Here's a look at their violations in this week's food for thought:

Taqueria y Dulceria Guadalajara at 1925 19th had 19 violations.
Health inspectors made them close for 24 hours while they cleaned up.
During the inspection health inspectors found:
* Beans were not cooling properly. This can cause bacteria growth. 
 * Raw beef and raw chorizo were sitting out on a cart at 64 degrees. They must be 41 degrees or colder. 
 * Carnitas and refried beans were not at least 135 degrees. 
 * Raw meats were stored above cheese and tortillas. 
 * Dishes were not being sanitized. 
 * An employee touched their hair and then touched a plate of food. 
 * A bottle of liquid was stored on a shelf with no lid or label. 
* Ceviche and sliced ham did not have an expiration date.
* There were no thermometers in the reach-in coolers.
* A burnt towel was hanging on the side of a hand sink and a food scraper was inside the sink. Hand sinks are for hand washing only.
* A storage bin for utensils was torn.
* Wiping clothes were not stored in the sanitizer bucket.
* Bags of flours, rice and beans were on the floor.
* Containers of white powder were not labeled.
* A styrofoam cup was used as a scoop for sauce. 
* The inside of the reach-in cooler was dirty.
* The lights over the prep area did not have covers.
* The floors and walls of the kitchen were dirty.
 * The certified food manager certificate was expired. And, the inspector notes, due to the number and the nature of the violations management did not show proper food safety knowledge.
The restaurant was re-inspected the following day and allowed to reopen.
