Food for Thought Report 7.6

We begin at Fuddruckers at 5501 Slide Road where inspectors cited four critical violations.

  • Eggs were found at 51 degrees. That's 10 degrees above the safe temperature of 41 degrees.
  • An open drink was stored on a shelf.
  • A cleaning solution was not properly labeled.
  • The shake machine was not clean. Cookie boxes stored below food prep-area were soiled. Ice cream scoops were not in good repair. And steak markers were found in a coiled container.

Other violations include: Wiping cloths found stored on the counter, they must be in sanitizer between uses. Bottled water was stored below raw food products. Hand sinks and equipment were found soiled.

Management at Fuddruckers forwarded all comments to their corporate office, but did say that, "All violations were corrected on site." The report shows that as well.

Here is a complete list of the restaurants and their violations for the week ending on 7/6/06.

And to the other low performer this week - Joe's Crab Shack at 5802 W. Loop 289 also had four critical violations.

  • Ranch dressing, blue cheese, grated cheese, egg wash and half-and-half were all holding above 41 degrees.
  • A hand sick was used for purposes other than washing hands.
  • Inspectors say beans found in the walk-in cooler were prepared two weeks prior to the health inspection. Foods must be date-marked, and thrown out after 7 days.
  • There were no paper towels at a hand sink.

Other violations include: Juices from salmon left on a counter were spreading over the food prep-table. The door on the ice machine was missing. The refrigerator door handle and the exterior of a drink mix container were soiled. The gauges on the ware washing unit were difficult to read.

Management at Joe's Crab Shack said they could not comment on the inspection or violations, but did say that, "All critical violations were corrected on site." The report shows that as well.
