If you like mushrooms, you may want to find more ways to use them in as many recipes as you can.

Researchers at Penn State have found that favorite fungus has more antioxidants than some of the more colorful veggies. Especially two darker mushrooms, the Portabella and the Crimini mushrooms, which both have higher levels of Polyphenols and Ergothionnneine than carrots and green beans. In fact, they were almost as rich in these antioxidants as red peppers and broccoli.
